When it comes to chocolate, resistance can be futile. But a little bit can go a long way, with a little expert know-how. Summon your powers of portion control and indulge with these tips from Chloe Doutre-Roussel, international chocolate expert and author of The Chocolate Connoisseur.
- Pick quality over quantity. Choose high-end dark chocolates from companies like Scharffen Berger (www.scharffenberger.com) and Askinosie (www.askinosie.com), or the new “premium” varieties from old standbys like Hershey’s and Nestle.
- Clear your palate. Before nibbling, get rid of any lingering flavors in your mouth with a bite of bread or an unsalted cracker.
- Eat slowly. Savor the flavor of chocolate like you would wine, Doutre-Roussel says. Choose a piece the size of your thumb, chew it to small bits, and allow it melt away before swallowing
