Conquer your cravings

Have a hankering for something sweet? Salty? Creamy? Crunchy? These easy-to-make snacks from the 100-Calorie Snack Cookbook by Sally Sampson, will tame your tastebuds without sabotaging your healthy eating plan. 

 

Whipped Goat Cheese [CREAMY] 

4 ounces goat cheese 

1/2 cup buttermilk 

1/4 teaspoon chopped fresh basil leaves 

2 tablespoons chopped sun-dried tomatoes 

1 head endive, leaves separated 

*Place the goat cheese in a small mixing bowl. Add a small amount of buttermilk and mash with a fork. Continue adding buttermilk as needed until the mixture is creamy. Add the basil and tomatoes, mix well, cover and refrigerate for at least 1 hour and up to 2 days. Serve goat cheese mixture with the endive leaves for scooping. Serves 6. 

 

Spiced Popcorn [SALTY] 

5 cups air-popped popcorn 

1 teaspoon canola oil 

1/2 teaspoon chipotle chili powder 

2 teaspoons kosher salt 

1/2 teaspoon ground cumin 

*Pour the popcorn into a large bowl. Gently drizzle with oil. Add the chili powder, salt and cumin and toss well. Serves 2. 

 

Baked Grapefruit with Mint and Honey [SWEET] 

1 large grapefruit, halved 

1/2 teaspoon honey or brown sugar 

mint leaves 

*Preheat the broiler. Place the grapefruit half, cut side up, on a large baking sheet. Drizzle with the honey and broil until the top is browned and bubbling, about fi ve minutes. Set aside for 3 to 4 minutes and serve warm, garnished with mint leaves. Serves 2. 

 

Chocolate Cereal Bites [CHOCOLATE] 

1/3 cup semisweet chocolate chips 

3/4 cup plus two tablespoons Rice  

Chex cereal 

*Line a baking sheet with parchment or wax paper. Place the chocolate chips in a saucepan and warm over low heat until melted. Add cereal and mix until coated. Divide the mixture into 6 pieces and place on prepared baking sheet. Set aside or refrigerate until completely hardened. Serves 2.
